Elstar is a diploid, self-sterile cultivar developed at the Institute for Horticultural Plant Breeding (IVT) in Wageningen, Netherlands, from a cross of Ingrid Marie × Golden Delicious (released 1972). Flowering in bloom group 3 (mid-season), it produces fertile pollen and is cross-pollinated effectively by compatible diploids such as Gala, Cox's Orange Pippin, Discovery, and James Grieve.
Parentage exclusions: Because Golden Delicious is a direct parent, Golden Delicious and its sports share S-incompatibility alleles with Elstar and must not be used as exclusive pollination partners.
