Developed by the South Dakota Agricultural Experiment Station, Gourmet is an exceptionally hardy pear bred to thrive in severe northern continental climates. It delivers medium-sized, yellowish-green fruit with crisp-tender, juicy flesh and a pleasantly sweet, dessert-like flavour that ripens reliably where tender European varieties fail.
Pomologically, Gourmet is male-sterile. Although a diploid, its anthers fail to produce functional pollen, meaning Gourmet cannot act as a pollinizer for companion trees in the block. Orchardists planting Gourmet must include an active pollen donor—such as Bartlett, Conference, or Harrow Sweet—flowering in Bloom Group 3 to ensure cross-fertilisation, and must provide separate pollinizers for any other varieties requiring cross-pollination.
The tree develops an upright, compact canopy with dense fruiting spurs that endure deep mid-winter freezes without bud mortality. It flowers reliably each spring, requiring minimal corrective pruning to maintain balanced annual production. Because Gourmet bears fruit reliably on young wood, growers can achieve marketable production within three to four seasons of planting, making it an efficient choice for cold-climate fruit diversification.
Key Orchard Considerations for Gourmet
Grafts reliably on hardy Pyrus communis seedling rootstocks or OHxF 87. Avoid Quince rootstocks in cold continental districts due to Quince's vulnerability to sub-zero soil freezes.
Exhibits solid field tolerance to fire blight and leaf spotting. Cold-hardy bark resists winter southwest injury and trunk sunscald common in open, windy locations.
Picks mid-season, usually mid-September in northern zones. Unlike storage pears, Gourmet softens pleasantly with minimal post-harvest chilling and is best marketed fresh or processed into fruit preserves.
